Sugar free Sweet n Sour Beef (HG lib)

Made this tonight, was SO YUM, had to share with you all! I promise, it looks so much prettier in person! the colors are beautiful! And not to worry, I will get better at taking these pictures! lol ;D


Sugar free Sweet n Sour beef
In LARGE frying pan, brown 2 lbs package gr beef in 1 Tbsp butter.
Sprinkle in approx:
1/2 Tbsp Sea Salt
1 tsp onion powder
1 tsp garlic powder

While meat is browning, chop:
1 each orange, yellow, green peppers
1 onion
add to meat and sauté till barely done, but still a little crisp:Fry on high while preparing the sauce.

In LARGE pot, heat Sauce:
1/4 cup + 1 Tbsp vinegar
4 Tbsp Xylitol
4 packages Splenda
I can plain diced tomatoes (796 ml 28fl oz can)
1 tsp onion powder
1 tsp garlic powder
1 Tbsp Kikkoman soy sauce
1/2 Tbsp sea salt
1 tsp chili powder
¼ tsp cinnamon

Separately in small bowl stir:
¼ cup water
3 Tbsp corn starch (or other HG safe thickener)
Stir into sauce till thick, pour into sautéed veggies and meat mixture, bring all to a boil,   And you also don’t want to cook everything together, the taste is much better when all the flavors are kinda separate. (in my opinion anyways!)

Tip: For the HG diet, use an alternate thickener for the sauce, as corn starch is NOT permitted on the diet.
Tip: serve with steamed vegetables, like carrots and/or whole wheat sugar free bread. (only 1 slice) And leave a comment on other sides you have tried, for those of you NOT having rice or pasta with this meal! Looking for some good ideas!! =) So, the last time we ate this, I steamed some cauliflower and chopped it up, it was similar to rice and VERY yum with the sauce!

Tip: if you are NOT on the HG diet, or low carb, serve with rice or pasta. We ate this as is as per our diet, and it’s delicious! Also, for those NOT on the HG diet, you can stir in 2 cups pineapple and heat for no more than 1 minute and serve. You don’t actually want to cook the pineapple. The heat from the rest will warm it up sufficiently.

Tip: I used stew meat tonight and it turned out so YUMM! I put the meat with the tomatoes and salt in a slow cooker for 3 hours and did the rest when I got home :)  It IS more runny this way for some reason, we almost needed bowls!! Next time I will take out a 1/4 cup of the tomatoe juices and use with my cornstarch instead of adding the extra 1/4 cup water.  Let me know what variations you have done to this recipe, I love trying new things! :)
