I kinda threw this together in a pinch and YUMMM :D Super easy, healthy and delicious!
Prep Time: 3 mins
Cook time: 25-30 mins
Ingredients:
10 eggs
vegetables (cooked or fresh)
Sliced Tomatoes
meat- Ham or ground beef, already cooked
Cheese- 3 cups or more
2 Tbsp butter
2 tsp Salt
1/4 tsp pepper or to taste :)
2 Tbsp Italian seasoning (Basil, Parsley, Oregano, onion powder, garlic powder)
Directions:
Put LARGE frying pan on stove med low with butter and lid.
Mix eggs till they don't stick together, stir in Salt, pepper, and Italian seasonings, pour into frying pan, place on lid. Let cook for 5 minutes.
Add chopped 4 cups of peppers, green onion, mushrooms (any veggie you like and/or have in the fridge- the more veggies the better really!) If your veggies are raw, make sure they are cut small or thinly sliced to cook a little faster, or use frozen veggies! replace lid, allow to cook for 5 minutes.
Add meat and slices of tomatoes, replace lid. Allow to cook for 10 minutes or until just about set.
Sprinkle on generous cheese. Replace lid and allow to cook for about 10 more minutes, until cheese is completely melted.
Serve hot! YUM! :D
Tip: By cooking this long, the bottom of omelet gets almost like a crust and cuts and serves very nicely. It also gives a chance to cook any veggies that are raw :) Depending on the size of your pan, you will need there to be about 1/2 inch of eggs on the bottom of the pan, so add more eggs accordingly ;)
Tip: about your meat: We have done this 3 ways so far:
about 2 cups ham,
about 2-3 cups taco seasoned ground beef,
2-3 cups Italian seasoned ground beef- for this one, just stir in 2 Tbsp Italian Seasoning to 1 lb cooked ground beef.
Bacon would also be great in there too! let me know some of your variations! :)
Tip: For those not on the HG diet, use a little salsa sauce or pizza sauce in the place of the tomatoes! You can also add some pineapple if you are into ham and cheese! :)
Tip: you can pretty much make any style 'pizza' you like with this recipe, just make sure you use all the spices, tomato or tomato sauce, and LOTS of cheese! :D
